From what I understand of your answer, this bill concerns large restaurant chains and not small family restaurants. We are not talking about small restaurants found here and there, but large restaurant chains which turn profits of up to $10 million. Is that correct?

My concern is that it will be complicated for restaurants that change their menus on a weekly basis or every three days to give specific information on the nutritional content of menu items. This concerns mostly large chains, who change their menus on a monthly or annual basis. For example, McDonald's and Harvey's have the same menu all year around. In any case, I think it would be easier to implement these measures in large chains rather than in small restaurants.

My last comment is on education. What role must we play to educate the public and make it aware of the dangers or consequences of that, in terms of what is found in restaurants, as well as on the food labels of products we buy on a regular basis?
This week, we looked into the issue of trans fats. This was not exactly a revelation for me, but we heard some highly important information on the long-term health consequences and dangers of trans fats.

I'm not going to start a polemic, but simply say that, two days ago, we heard from representatives from Agriculture Canada and that, according to the WTO negotiator, prices are fixed on a world scale. You said earlier that it was the Americans who did that.

I also asked the question concerning the letter containing a number of arguments that our visitors put before us. I don't imagine you meet them often or that they are aware of these issues, but they nevertheless do not seem to know that we had received that letter. They didn't really seem aware of its content. That surprised me somewhat. And yet I'm convinced that you sometimes talk to them about these questions.

I'm asking myself a question. I know people at home who were dairy producers and who became grain growers. When you know what goes on in that sector, you wonder what could have led them to opt for that form of production.

I have one word in mind, “prevention”, and there are a couple of responsibilities I think we have. Is there a plan coming to address the issue of prevention and information for the public? Even if you have nice labels on everything you eat, if there is no sensibilisation or education for the public, they won't change anything. According to me, that's why this is a serious issue. Who should take the lead to do more than we're doing now, to prevent and to help?
